If you’ve ever thought that eggs are the lifeblood of a rich, velvety baked cheesecake, think again. Whether you have an allergy, dietary restrictions, or simply ran out of eggs, you can still create a showstopping, ultra-creamy cheesecake that will fool even the toughest critics. In traditional baking, eggs play the perfect role of binding the cake and providing that signature custard-like lift. When we remove them, we just need to rely on a few clever swaps to achieve that exact same luxurious, melt-in-your-mouth texture.Cheesecakes can be baked or no-bake, though I have shared a baked recipe; the comparison is very clear.

Baked vs No-Bake: The Eggless Advantage

When going eggless, you have two fantastic paths to choose from:

1. The Eggless Baked Cheesecake

Yes, you can still bake an eggless cheesecake! Instead of eggs, I use cornstarch (for structure) and sour cream or heavy cream (for moisture and richness).

  • The Texture: Dense, rich, and closely mimics a classic New York style.
  • The Trick: You must let it chill thoroughly. Without eggs, the cooling process in the refrigerator is what fully solidifies the structure.

2. The No-Bake Cheesecake

By default, most classic no-bake cheesecakes are completely eggless.

  • The Texture: Light, mousse-like, and incredibly refreshing.
  • The Trick: Whipping heavy cream to stiff peaks and folding it into the cream cheese gives it a gorgeous, airy volume without needing any oven heat.

3 Foolproof Egg Substitutes for Baking Cheesecake

If you are modifying a standard baked cheesecake recipe, you can’t just skip the eggs, you need to replace their moisture and binding power. Here are the best ways to do it:

Substitute Ratio (per 1 large egg): Why it works

Cornstarch + Water: 1 tbsp cornstarch + 2 tbsp water. Binds the liquid together, creating a smooth, sliceable texture.

Condensed Milk: Replace sugar & egg . Adds incredible creaminess and sweetness while acting as a heavy binder.

Preparation

  • Line and prepare a 6-inch cheesecake ring/tin.
  • Preheat the oven to 160°C for 45 to 50 minutes

🥮 Biscuit Base

  1. Combine the crushed Biscoff/digestive biscuits (6 g) with melted butter (20 g) until evenly moistened.
  2. Press the mixture firmly into the prepared cheesecake ring.

🧀 Cheesecake Filling

  1. Beat the cream cheese 140 gm until smooth.
  2. Condensed milk-100gm
  3. Yoghurt -30gm
  4. Fresh cream -30gm
  5. Lemon juice -2tsp
  6. Vanilla extract
  7. Mix until silky and lump-free.
  8. Prepare a slurry by combining corn flour (10 g) with warm water (20 g).
  9. Add the slurry to the cheesecake mixture and blend well.
  1. For chocolate cheesecake 🍫
  • Fold in melted dark chocolate 40 gm until evenly incorporated.
  • Add the cocoa powder 2 tbsp

For Blueberry Cheesecake 🫐

  • Fold in blueberry compote or swirl it with a tooth pick through the batter for a marbled effect.

Assembly

  1. Pour the cheesecake batter over the prepared biscuit base.
  2. Smooth the top using a spatula.
  3. Gently tap the tin to remove any trapped air bubbles.

♨️ Water Bath Baking

  1. Place the cheesecake ring inside a larger baking tray.
  2. Pour hot water into the tray until it reaches halfway up the sides of the cheesecake ring.

Bake at 160°C for approximately 45-50 minutes, ,the top should appear dry

❄️ Cooling & Chilling

  1. Remove from the oven and carefully lift out of the water bath.
  2. Allow the Cheesecake to cool to room temperature before serving.
  3. Refrigerate until fully chilled.
  4. For best results, chill overnight before serving.
